The salmon for this gravadlax is raised in low numbers in the fresh icy waters of the Faroe Islands. The health of the fish and the wider environment are the primary concern to our producers, great fish make great salmon. The fish are finished in very strong currents to build up muscle tone and flavour. lightly cured by our friends at Severn & Wye.
Great with our wholewheat or medium rye sourdoughs, with just butter and lemon juice. Bliss.
